Chicken Breast Sweet potato & Steamed Veggies

1 Chicken Breast
1 clove fresh garlic
4 oz Sweet Potato
Half a head of broccoli
1 carrot
½ Lemon
Rosemary
Black pepper

Score the chicken breast, rub the garlic into the chicken and squeeze the lemon juice over it, sprinkle with black pepper and rosemary.
Peel the sweet potato and add to a pan of boiling water and cook until you can stick a fork in it easily.
Heat 2 teaspoons of olive oil in a pan at medium heat. Add the chicken breast to the pan and cook on one side for approx 6-7 minutes and then flip, cook until the breast is no longer pink inside.
Chop the carrots and broccoli and add to a microwave safe bowl and cover. Microwave for approx 3 ½ minutes depending on the strength of your microwave, or until veggies are brightly coloured.
